Panceta.
The Panceta is the meat product that is under the skin, primarily on the belly of the pig, and consists of Tozino (fat) marbling of meat. Typically cured with salt and a few key spices (Peppercorn, a little sugar) and it is eaten grilled or fried or used in stews. In Spain, a very popular use is in barbecues, along with sausages. The panceta, unlike bacon, is not smoked, allowing for a gentle sweet flavour note to emenate from the fat.
