Our range of classic Spanish cheeses originated from a long history of dairy production dating back to before Roman occupation, representing different regions that developed unique cheeses based on their local climates, terrain, and available milk.
Sheep’s milk cheeses were common in Spain’s dry interior, cow’s milk cheeses developed in the greener northern regions, and goat’s milk cheeses were widely produced because goats were inexpensive and accessible. Spain has more than twenty Denomination of Origin (DO) or Protected Designation of Origin (PDO) cheeses, which protect their quality, geographical origins, ingredients, and traditional production methods.
