ORIGIN
Gorria pepper, a variety of Capsicum annuum was native to South America before being introduced into France during 16th century. Now cultivated in the French commune of Espelette, Pyrénées-Atlantiques.
On 1 June 2000, it was classified as an AOC product and was confirmed as an APO product on 22 August 2002.

Espelette pepper (stalks, skin and seeds removed) blanched and puréed with lemon juice.
