It owes its name to its growing location (Alora Area, in the province of Malaga), the only Spanish variety with Designation of Origin.
Collected when green, in late August or early September, fermented naturally in water and salt.
A crisp olive, spherical in shape, the spices used in fermentation are at the front with a sweet finishing note.
